Had leftovers with a hint of taco to them and tortillas laying around. Pineapple, watermelon radish, avocado, and some pig meat hiding under there.



A little more color on the tortilla than I would like, but otherwise lovely.

Yim, I am very impressed that you made nem nuong. It's not super well known.

If you have extra of the sausage, you can also shape it in to meatballs, grill, and serve with rice noodles and nuoc Cham and herbs for essentially Bun Cha.

Hey buddy, long time no see, missing your beautiful contributions to this thread. Still want to hook up with you in Austin when we can finally get back to living

I tell ya, I discovered the nem nuong at a really great Vietnamese place called The Sandwich Hag but they're far away from where I live and have limited hours so I got frustrated from not being able to satisfy the hankering for their food so I decided to give it a shot. I've made 1000's of pounds of sausage while working at the restaurant I interned, so I felt comfortable giving it a shot.

Its REALLY good and and people dont know what they're missing

My friend recommended vietnamese porkchops. Had to do them in the broiler because I don't have a grill atm, but they still came out great. Highly recommend this recipe:

If I had a live fire this would have been epic as the pork needed more char on it - really reminded me of my favorite greasy spoon in SF https://www.yelp.com/biz/cordon-bleu-san-francisco
My wife said the best part was the country salad, which is just sliced cabbage with salt and nuoc cham from the sauce in the recipe.

It looks pretty cool if you have the counter space. Extra cool if you bake bread.

I use a similar recipe, but instead of pork, I take chicken and fry it with sauce. Grilling is certainly better.

Bread baking seems hard with it until people figure out how to use it properly. Seems like traditional methods require a ton of tinkering and firmware update change parameters

Made another batch of Chef Sheldons Mochiko Chicken, Kochujang Aioli, Su-Miso, Kaki Mochi Crumble plus my attempt at Trader Joes Cruciferous Slaw since they discontinued it.





You can see the ingredients for the slaw on the label, the ginger dressing was 1/4 C honey, 2 T rice vinegar, 1/4 C fresh squeezed lemon, 1/2 C olive oil & 2 T fresh finely diced ginger and a dash of kosher salt, came out damn close imo

I’m sure I’ve said it before but tin roof is the best fast casual restaurant I’ve ever been to. Last time I was in Maui I was there for ~100 days and I probably ate there 50 times. And by “ate there” I mean hammered it into my mouth in the parking lot because that place is the size of a closet. Everything on that menu is incredible.

My job is basically WFH in the winter and my GF is a nurse so she took a travel nursing job on Maui for the winter and we moved out there. It really is a paradise.
