When butchers use the saw to cut through bone it leaves some bone residue and chips behind. Good idea to rinse/wipe it off.

I apparently didn't do a very good job bc when I zoom in on that pic I can see a few spots with some bone flakes that I missed


If the meat is boneless you dont need to rinse, but drying is still important for browning the meat prior to braising (or pressure cooking etc)

Foobar challah rolls look good to me.

I forgot to get ham or lamb for Easter on my trip last weekend to the grocery store. Well I decided to defrost some chops and try this. No cool fire setup but grill will have to do.

Well I forgot it was Easter but you may recall I have no shortage of ham.



Thin sliced aged bentons ham over fresh made biscuits (they are under there I swear!) with whipped butter and drizzled honey.

On a side note I really hate those plates. My gf and I combined houses and she refused to throw them out.

This.

That ham would look great even on any paper plates from Walmart. But leaving the biscuits hidden was a cruel prank.

There's a great ham glaze in Ruhlmans book Charcuterie, heretis:

1-1/2 Cups Dark Brown Sugar
3/4 Cup Dijon Mustard
1 Tablespoon minced garlic

SO damn good!

yeah those baguetttes look great. also had to do a double take halfway up the page when i thought i was looking at a nike branded stand mixer, realized it was just a reflection.

biggest benefit IMO is cooking pork and beef, sometimes chicken, and making lots of something to have leftovers the next day or so (almost always better then next day).

start with carnitas https://www.bonappetit.com/recipe/in...-pork-carnitas the key is to finish them in a pan to get some char.

I don’t use mine all that often but an instant pots basic use is just cutting down the time for stuff. So instead of 6 hours in the Dutch oven it gets an hour in the insta pot. I still generally reach for my Dutch Oven but will grab the insta pot in a pinch.

Kenjis Chile verde is awesome in it.

Oh yes please, everything looks perfectly executed. Those mashed potatoes, Frenchies got that purée de pomme down to an art.

I like this do you any pre sauté of the onions or bacon?
