I have a GREAT recipe we did in a pastry class I took years ago, its not written up very well but hopefully you can read my writing ok.

It starts by making a rich sweet dough and then rolling with a sugar mixture, cooked in a pan on a honey pan glaze and then topped with icing . They were amazing and I've avoided making them ever since because I knew I wouldn't be able to resist eating them all by myself

That sounds pretty damned good. Way too much work for me for cinnamon rolls though.

they kind of are and thats probably a good thing otherwise I'd be banging them out too often. I haven't made any since the class years ago.

If you have the sweet dough already made and in the freezer, the rest is pretty easy

My favorite apple pie is kenji's filling recipe and stella's crust recipe:

Stella's crust is very easy to work with (for a pie crust) and I like her physical descriptors to help understand when you're where you need to be.

Whereas Kenjis method to pre-cook the apples to ensure the hold their shape during baking yeilds slices of pie that are full top to bottom of apples, not a flying crust and a soupy filling. Sciency bit is here: https://sweets.seriouseats.com/2011/...e-filling.html

Surely he would have some great cinnamon roll and apple pie recipes to post?

I wonder if he is ok, I did a search for his last post and it was back in July

regardless, I'm looking forward to seeing some good apple pie and cinnamon roll pics soon because those recipes sound good

I learned that french people don't like cinnamon.
Apparently cinnamon is not used in any desserts in France and they're not used to it so it's an incredibly strong flavor for them.

My wife is from France and says it quite common in desserts and cooking. It might possibly be that it’s not traditional and is influenced by North African cooking but has become mainstream. They don’t do candies and guns and such like they do in the US.

I agree one think they really don’t do which I think is a big loss is peanut butter. No peanut butter candy, baked goods etc. we always bring some to my mother in law.
