Nuoc Cham experiment 1 last night. A couple eggs drizzled with 4-5 tablespoons. Drank the rest after eating the eggs. Mmmm:

I think it would be great as a dessert. If you are doing this for dinner though, I would maybe make the mei cai kou rou in the classic form and have the custard buns as the only bun item. If you're having it for brunch or something, having multiple buns is fine.

Added the blended cliantro, peppers, and tomatillos to the pork and onion.

Almost 3 months late. After paying for it, being told it wasn't in stock. The delivers 'losing' it. The delivers saying they couldn't fit it. The fitters saying they couldn't connect it. The electricians saying we had the wrong electricity.

Finally my new badass cooker is working (plus a hefty refund for all the hassle)! Six burners with a wok burner and griddle pan.

I think a bit over £2k, but then we got a lot off due to all the messing around, and after a lot of angry tweeting companies.

I believe it's the biggest you can get before industry ones. Slightly overkill imo, especially as there are only three of us in the house, but my housemate wanted it and paid for the majority.

txdome: Luckily we have other surfaces. The plan is to eventually get an island thing to work on, with a sweet overhead light setup.

theyd go straight for the cleaver

got to use a restaurant wok a few times when i worked in one, it was awesome. just a funnel of blue flame, i always wanted to toss something in to see it disintegrate
