I finally made Kenji's sauce with San Marzano D.O.P. recently and the difference was incredible. I'll never go back to cheap tomatoes.

Wookie, did you get as much caramelization at 250 as opposed to 300?

Been through a bunch of can openers in the past 5 years, can't find a good one that lasts. Last one was a kitchen-aid hand held, made it about a year. Would like to stay hand-held, any recos?

Kitchen Aid sucks.

I have an Oxo and have zero complains. It's relatively cheap and is a beast.

i got this. Easiest can opener i have ever used. Don't even need to squeeze the handles together while you turn it, and has a magnet to pick up the lid for you!

Side note: I think there needs to be a PSA to the masses to not buy Kitchen Aid products. They look nice and are relatively cheap and marketed well, but they are built very poorly and ultimately are a waste of money imo.

Ftr, Aogami Super is the strongest steel for kitchen knives. More maintenance but they hold (a sharp) edge better than anything out there.

With all that said, Wusthoff Classic IKON is a great series of knives that have good weight behind them and sharpen really well... And like Timex, they can take a lickin' and keep on tickin' .

I am very lucky, my youngest son (27) worked for a while at a knife shop, and is a chef.

He got me this for Christmas last year:

I also have a good Shun 10 inch Chefs knife, which is a bit too big, I think 8 inches would be perfect. I would love a good boning knife, or an otherwise thin and flexible knife that I could use when taking apart fish, chicken or beef.

Though I'm not a huge fan of Shun knives, that one you linked seems pretty awesome - and even better that your son got it for you.

Wrt filet knives, I've got a nice Rapala knife, but Dexter-Russell is the industry standard, as far as brands go. Anywhere from $30-50 should land you something really good imo.

If you're looking for a boning / honesuki knife, that's a totally different ball game.

Also - your youngest son is 27 years old???

Yeah, when I met my wife, she already had a couple boys. The pluses are I missed the diaper stage, and both guys are awesome. The cons are I wasn't there for the first bits (walking, talking etc).

And those Dexter-Russell knives look great!
