There's probably no "must" haves... but I can definitely give you some common recommendations.
I have the regular Pixel and this is actually the first phone that I have NOT installed Nova on - but Nova would definitely be the go to rec for a different launcher.
I prefer Textra > Android Mesages mostly for some very minor customization stuff, black/AMOLED theme, etc. I expect I'll be switching back to Messages when RCS becomes a thing.
SwiftKey is a popular recommendation over the Google keyboard, but I prefer the Google one these days. The delete and cursor gestures are awesome, and it looks nice after the most recent update. I found the auto completion to be the same (AFTER giving each at least a good month of training).
I use Tapatalk for 2p2 and Reddit is Fun for reddit. I think the official FB app is totally fine and the best. Some complain about battery drain, you can use Tinfoil or Metal or any of the other webpage skins, they're mostly the same IMO.
I generally like all the other stock Google stuff. Calendar, Photos, Keep all fantastic. Not much else to say I guess. Just a beautifully smooth and great phone overall.

Whether it's "worth" it or not is subjective, but I personally think that it's worth the wait. Yes, it probably won't come out until at least October, and given how much of a **** show getting the Pixel was you may not get it for another couple months after that. However, the Pixel was a very rushed development, and although I absolutely love it, it makes me really hopeful for what they do with the Pixel 2. They will likely fix some major complaints that were probably likely due to not having enough time - like the lack of waterproofing and a better thinner-bezel design.
