i dont reverse sear steak over coals. seems a little too fussy. i dry brine the steak and let it sit out while i do my prep work, maybe it comes up to nearly room temp. i get oak coals molten and basically char crust it. with the dry brine its easy and perfect and even flame up are ok and welcome. just get that thing torched. dont forget to 4 side cook it and render the fat cap. at this point it will be perfect "black and blue" i like my steak about 125 degrees (but i never temp it). i set the steak fat side down to the edge of the grill where it is very warm but not hot. it sits there resting while i grill the side dishes. everything is ready to serve at the exact same time.

im 100% correct about the food city, ive travelled the world extensively and its not even remotely close. (and dont try to say NYC lol. 3rd best food city (after san fran) try getting a decent taco or burrito!!)

doyle was much much older than me and a vegas guy. im an LA guy.

2nd is san fran, 3rd is NYC. outside america really doesn't really rate. try getting a great burrito in tokyo, or a great peking duck in Sao Paulo or ghost chili lamb vindaloo in stockholm. a city like los angeles has world class versions of every type of food on earth cooked by people who got to america like 2 weeks ago living in massive ex pat communities. we grow every type of fruit and vegetable fresh and raise every kind of meat. southern california really is heaven on earth.
