Trailer looks awesome. What did that run you total? What hours are you planning on being open? Are you doing any type of advertising/social media/marketing? Are you planning on parking in a single spot for a day or moving multiple times?

I would rather not say exactly what i paid but it was more than 16k but less than 28k. To start out since im new to the industry i plan on only being open weekends. My intention is to try and create or see if their is a demand for the truck by not being open all the time. This will also allow me to experiment with a couple different spots. I will be staying in one location per day. I also want to try to mix in a late night service for when bars are letting out.

Any idea on what your food cost % is going to be? Everything going to be made-to-order or are you going to do some precooked/pre-made items (thinking breakfast sandwiches would be easy to pre-make and keep in warming oven for faster service times)? What have been your costs/burdens/unexpected obstacles (other than the trailer)? Sorry for all the questions, but am really interested. Thanks

Al pastor tacos are amazing. They're like a sweet marinated pork with pineapple pepper stuff. And I'll take this as an opportunity to soapbox about product descriptions: IMO it's essential to have photos and good descriptions of your food items.

I've met few people I turned on to tacos al pastor who loved them and said something like I always wondered what those red tacos were on the menu, I usually get ____ instead because I know I like it. If I had a taco shack selling these, I'd have a line under the name something like "sweet and smoky pineapple grilled pork tacos" or whatever they are.

So far no updates really to report. I go up for Health Inspection in the middle of March and hope to launch in the beginning of April.

This weather we have had on the east coast has really made it hard for me to get going. We have only had a couple days over freezing temps, and since my trailer is stored outside my pipes and water tank often freeze.

I will be sure to provide another update when I finally get out on the road.
