I've often seen“Percentage of time villain Folds T o a shove” and I don't know what to make of it, how to calculate it?

Check splitsuit site. He is selling workbooks and excel sheets with many poker equations. And you pay what you think is appropriate, you are setting price, starting from 1$.
What you are asking its just % of range that he folds. Ex. He gets to River with QQ and TT, 6combos each. If you assume he will fold TT always, then 50% fold.
For more complex ranges use equilab or flopzilla.

Check splitsuit site, I don't know what site, link to See Fold% is a statistic, player lag style, can not be simulated with equitytools, may be a hypothesis, which equity has this fold% calculation function?
