I believe he said it was PLO, bobby had AKxx flop QJT rainbow and baldwin just check called him all the way down. pretty sure it was a str8, but aba had air I think, but expected a raise probably at some point, and maybe the river made it non nut, any1 have the hand?

If they were playing really deep and Bobby had redraw problems then flop/turn is standard. (I've never seen anyone flat-call the nuts hu on the river, but maybe that's just some weird live thing, and anyway it's irrelevant).

However if they weren't playing that deep I'd say flat-calling the turn is a pretty advanced play, assuming Bobby had good reasons for it.

I'm not drooling over Baldwin's play or anything but it's pretty much the exact opposite of "Party $25" play.

You make it sound like they are mutually exclusive? Anyone who is a hardcore nuthugger is rarely any good at poker themselves.
