1080 doesn't matter nearly as much as you think. The extra resolution is really meaningful if you're sitting somewhat close to a big screen. Overall there will be a small increase in picture quality with 1080 material, but a somewhat larger decrease in picture quality for lower resolution material (720 & SD).
Attributes like color reproduction, contrast ratio, black level and video processing quality matter far more than actual resolution. The 720p Panasonics plasmas are pretty solid in these areas, and will outperform most other flat screens on the market, including the 1080 ones.
Also, like pretty much all 720p HDTVs made in the last few years, it does accept a 1080i signal (and downscales it). Early HDTVs were sometimes only accepted one or the other, but that's not the case today.
