If I see someone tank when they have the nuts and there is only one possible option that makes sense (so he isn't thinking about betsize), I will call the clock on them every single decision they have within seconds.

It depends in part how frequently you do it. If you're doing this once every 20 hours of play or so, nobody is going to have much of problem with it. Especially if you are paying attention to the game and making quick decisions the vast majority of the time.

If you're doing this a couple of times an hour, you're going to irritate the players and the staff. It is simple math that the more hands that are dealt, the more revenue that comes in to the room. If you irritate the staff, there will come a time where there is a judgment call needed and you aren't going to get the benefit of the doubt. The players aren't going to back up your version of the story.

It happens in many different situations. There's an old story about a baseball pitcher up against Rod Carew, a hitting legend. The pitcher has ball 4 called and comes storming off the mound complaining that it was a strike. The umpire listens for a few seconds then says, "If Rod didn't swing at it, it wasn't a strike."
