You will probably also need to obtain a license from the guy who owns the patent for hole card cams... it doesn't expire for another 4 years.

I've thought about this a little bit:

* You can use lipstick camera's, which can be drilled into the rail of the table.
* Get a 16-port (or 8-port, depending how many seats are at your table) security camera DVR and mount it under the table. They're super-cheap anymore, I'd be shocked if you couldn't find one for under $500. Run the video from the lipstick cameras to the DVR. The DVR should come with client software for your computer. This way, you could see all the hole-card cams at once, and edit the video as needed.

I can't imagine that the ones you see on TV are a whole lot different than this.

Buy some small USB web cams, modify a table to mount them, then get some software that allows recording of multiple devices.

There is plenty of software out there that does this, such as http://www.pysoft.com/ActiveWebCamMainpage.htm No idea if it is any good but it is just one that I found.
