I deal table games in Southern California and the vast majority of our casinos don't pool tips, and I can say from experience that there are many dealers that have had 4 to 5 figure earning days in tips. The 5 figure days are rare of course but our high limit rooms have players giving decent action and have 6 figure swings regularly; nothing like Vegas of course but enough to have dealers make a ridiculous amount of money in one night.
The "fairness" issue is definitely a hot issue depending on the place and the working environment but at the end of the day, it's just part of the job and the world is not fair either. Attractive females make far more than male counterparts but every dog can have their day and make a lot of money in a short amount of time.
Carnival games and blackjack are by far the biggest earning tables for dealers and Roulette and Craps are by far the worst. We are the only state that deals "card craps" and "mystery card roulette" though so that's obviously going to affect the action.
I don't have any good first hand stories but had high limit dealers on my shift each make 10k+ nights several times while this one player was in town playing for a while. Luck is probably as big a factor in your earnings as your personality and dealing speed etc when it's a non-pool joint but as a dealer it's what I prefer and I don't mind knowing others are making a killing more than me because I'm more than satisfied with my own earnings and have a shot to bink a huge night as well.
