honestly, this is the way I do it and I have always gotten a great deal every time I go to vegas (June 12th will be my 3rd trip)
First, I figure out the exact dates I want to go, give or take a day or 2
I set price alerts on Kayak.com for those dates you have in mind, and check those emails everyday
Flight prices fluctuate every single day, so when one day a package could be $600/person for mgm and 3 days later it could drop to $350/person
Flights have been hovering around $380 round trip out of Boston almost all year, but one Saturday about 6 weeks ago, round trip flights for my specific dates dropped to $220 a person. Coupled with the poker room rate I got at mgm ($40/night, just call the poker room), and my trip is $330 a person for 6 days/5 nights.
It doesn't hurt to check expedia, orbitz, travelocity from time to time
