Villain: stack size $1200. He is a 50ish old man who caught me bluffing earlier in the session and has been calling me down with less than marginal hands.

Hero: stack size $900. 18 year old WM. I have loose image at the table bc im the only one 3betting preflop and have been C-Betting almost every pot bc im at a table full of tight old men.

Preflop: Hero has AA and opens for $15 Utg+1. Villain calls in the Cutoff. Big blind calls aswell.

Flop: QJ3, Big blind checks, Hero bets $35 with over pair/nut flush draw. Villain calls and big blind folds.

Turn: 7, Hero bets $75 (I bet this bc Villain has shown that he will call me down with middle pair or top pair no matter what the board texture is), Villain calls.

River: A... Im not sure to either value bet or check call. What should i do in this spot? Any thoughts about my pre-flop/flop/turn play?

A generic range for any average villain is KcTx, KcQx, KcJx, QJ and sets. The only hand in this range you lose to would be KT. I would bet as many of these hands will check back if checked to. And I can't see anything other than KT raising your bet...villain dependent.
So b/f $125

I'd bet a bit larger, maybe 170. If he's so stubborn that he's calling me down with like KQ here then the extra 50 probably isn't making him fold. If he has a more normal calling range then it's very hard for him to have a bare top pair here, so I'm sizing my bet to get value from better than one pair hands. I'm not super worried about flushes because he can't have the nuts, so I'd expect a turn raise from most villains to protect against the A. If he has KT, that's life.

I'd value bet with the 3 aces against this guy in particular

$250/fold

You say the guy thinks you're FOS, right? Pot it and fold bc he isn't raising without at least a straight.

You should not get raised here often with out the nuts - so since you block the nuts, I'd value bet.

You are targeting 1 and 2 pair type hands - so i'd size around $150 - $200

He should call this bet.

Yeah I bet on the larger side, anything less than 200 is no bueno vs. a calling station who also thinks we are FOS. You can
