Vs. that kind of floaty, disbelieving, bluffy player (but not bluffy enough to bluff raise to represent trips) I think a better line is to bet flop, check turn. If a player is truly disbelieving and generally sticky, he likely isn't going to fold to like a 1/2 psb ott.
The reason we can get value on those boards is because V's often expect us to be scared of the 8, so when we continue barelling they often think it's more likely we're bluffing.
If they are over-folding turn, I check turn bet river w/ overpairs, and double barrel my overs
If they are over-calling turn, I start trippling with overpairs, give up with overcards
