On one hand I feel good that my read was right, but I'm not a big fan of risking 100BB on a feeling and one relevant hand history, so any more advice appreciated.
Doing it based on one hand makes it iffy, but if we know he will get out of line (and we have the roll to shake off the loss), then I say there is nothing wrong with this play. If nothing else, your willingness to shove back at him may make his 3bet range against you a lot more narrow whether you win or lose the pot.
