If you mean what statistic would give yout he information you need, you want holdem_hand_summary.cnt_players.
If you mean how is cnt_players calculated, everybody who is not sitting out but is sitting at a table and is dealt cards should be counted. People sitting out should not be counted.

Are you using Beta 13? If not, please try updating to Beta 13 there were problems with Hero stats in all prior versions.

If you change the group to "show for everyone but hero" it will not show your stats, but it will show the group for everyone else. See the
HUD Configuration FAQ.

There's also our

I think I will check back in at the end of the year, to see whether there is a "Production" quality release available then.
Beta 13 has markedly improved things, and we expect that very shortly things
will be stable for everyone. There is also a free 60 day trial which you can play with which is only limited to having just one database and not allowing you to create custom statistics. But it is not limited to a certain number of tables or a certain number of hands, so you can feel free to try it out and see what happens. (PokerTracker 3 and PokerTracker 2 are entirely separate and you can have them running side-by-side without any trouble; I've done it personally many times.)
