Behind the crisp is a multipronged process. First, it is cooled naturally while on your dinner plate or in the serving pot. This lets a little bit of the water evaporate naturally. Then it is refrigerated. Some of the water has already evaporated, so the raw spaghetti material that is being cooled is fairly dry. Then it is reheated. To get optimal crispiness, you have to wait several hours before you reheat it. If you reheat it, say, 90 minutes after you serve it, it's not going to be as crispy, because it will still be wet. It will be warm and soggy, which is bad.

When you're grinding and want a quick meal and need to rush down to the kitchen before they kick you off the tables for missing three orbits (this is especially true if you 9 table and end up using up some of those orbits on some tables while you are waiting to sit out on others) raw ramen is where it's at, especially if it's the first thing you can grab.

I never really got this. Cold pizza has always tasted terrible to me, at least after it has spent some time in the refrigerator. A-few-hours-after-being-delivered cold, that's okay I guess.
