I have introduced a new estate in the PT3 and then the program has requested me update the cache, but it took more than 20 hours with it I can cancel the process or do I have to wait longer.

How big are your databases?
If you have large databases it can take that long.
Also make sure that you have plenty of free space on your hard disk - postgres will take much longer to do any of the large housekeeping operations if it doesn't have lots of disk space to work with.

It shouldn't take that long for 100k hands.
Try re-running it after you reboot your computer.

I closed the program and working properly but I can not use the new stat. Today I'm going to play poker, I will try again tomorrow to make the update.

Did you build the new stat yourself, or import it from somewhere?
What section is the stat in?
