If you start with the micro stakes version then move up to the full version do you get to keep all your old stats on players and does it save the way you have it setup or is it like starting all over?

Yes, you can keep your databases from the micro-stakes version.
When you update your license, or to a new version of PT3, you keep all your existing databases and settings.
