Has the EV graph line (cash games) option been removed from the current beta of PT? I can't seem to find it.

You need to tick/enable the "Display All-in EV" option on the graphs tab in recent Betas.
(Also check that you downloaded the Beta, not Build 5.2 which is significantly older.)
