The club business is a shady business. Wheeling and dealing. Their goal is to make money and they obv. don't care if they piss of a few people in the process. I am not much of a club go'er I have done bottle service 5 - 10 times and I can see the benefit. But I do think that a host position is not necessary. You could have one guy who is in charge of table service. Thats the way it should be. One guy who you speak to and he has 2-5 helpers. So if you have a problem you know who to talk to.
What I don't like is the idea of the club changing its mind or "bumping" me for someone who is going to give a bigger tip without having any recourse. (eg. I get a table and pay for it and then suddenly somebody comes in and decides they want my table and tip more, then I get moved to a crummy table without being given anything to compensate (no discount, no extra alcohol, just sorry ur SOL)
You have no idea how the club business works if you think you could run a 100 table nightclub with 1 host with 2-5 "helpers"
And most places, if they move your table, will compensate you for the move.
