I tried the reverse sear tonight. 15 minutes in oven at 235. Rest for 5 min. 2 min each side on hot cast iron with a little butter.

I'm not sure how much the oven did in terms of cooking the steak but it was juicier than my usual quick sear, then oven for 6-8 minute method.

Not sure if they told you in the steak thread, but as I understand it, one of the reasons for low and slow followed by a reverse sear is to minimize the part of the steak that is neither tasty crust nor red goodness.

If you live in Vegas and aren’t getting your steaks from echo and rig, you’re failing miserably. Get some of their aka ushi (wagyu) skirt steak, slice it into small pieces, cast iron that **** on high heat for about 2 minutes per side, wind up with the best steak you’ve probably ever had.

TBH, the hat puts a big red bullseye on his chest. Which is fine, IF you know how to handle the way that changes the way people perceive you and will play against you. Clearly, he has no idea how to make that adjustment.

IIRC he got reported by someone for filming inside a casino and was banned locally. Since he had limited options within driving distance it was going to be a big hit to his poker earnings so I think he went through a lengthy appeals process to get the ban lifted on the condition of no more filming. I remember seeing some of his videos about those goings on. I'm not saying that's the entire reason, and frankly I forgot about him until now, but I think it was a big factor. But that was months ago and maybe my pony is slow and something else is going on too.
