Close to the strip, I'd probably go with Sakana, Jjanga, or Umiya. Of the three, Sakana was my favorite but when we last went (pre-covid) they didn't take reservations, and the wait times to get seated were quite long in the evening.

Anything more specific on what you’re looking for?Peppermill is interesting but a diner and I’d assume more casual than what your looking for. Vegas as others said is a good spot for AYCE sushi, Thai.
