At the end of the day, being a great poker player is about making the most money and PH does seem to have the ability to that. So what if he can't beat beat high stakes online so long as he is raking in the chips?

Hellmuth is only successful because of his personality and because he's won tournaments that mainly consist of amateurs.
He's not playing the high rollers because he knows he's pretty big underdog, and nobody will stake him.

No way he'd beat 1/2 on Stars.
And he's down tons of money in live cash games.

Anyone reading 2+2 regularly and therefore knowing poker strategy quite a bit could beat uninformed rich whales "having fun" ...

Hellmuth just does what any player who wants to win should do, bum hunt (aka game select).

I've been trying to game select by getting into some local cash games at nursing homes. Those old folks have money to burn and generally can't see or hear too well, so I take their money and tell them how great I am at poker.

This is why the games are harder today. Not because all the fish left but because all the good players who were playing above their skill level decided they no longer wanted to show everyone how awesome they were.

If anything, the best game selector ever has been Tom Dwan. Even with rumors of him being broke, there's no one that can top him in table selection, and this goes back to his online days when he won millions off Guy.
