I always recommend going to Ayers rock but it is not cheap to get there and it will take up quite some time. There was a tour around the rock done by an aboriginal with a translator which was great. Even an atheist like me found it a very spiritual place.
Great barrier reef is a must. Take one of the smaller operators and not the big boats that go out there. Even better if you have a diving license but snorkling was amazing.
Surfing for beginners is best in Sydney or on the gold coast. Manly surf school in Sydney is lots of fun.
The rest depends on time and money. In Cairns the wetlands, tropical forest and cape tribulation are great. Around Sydney the blue mountains and if you like wine hunter valley.
