It's done mostly for fun, though Carlsen has got a bit of money to go with it.
Speaking of myself, I just was too young (couldn't even wank yet) when I learned most of the things that I know in chess. Remember, every Russian schoolboy knows to recapture with a pawn. It's a cultural phenomenon that's hard to overcome at such a young age.

To generalise, the enjoyableness of anything is not absolute but depends on the circumstances, and there are objective ways to predict enjoyableness because there are correlations.
E.g. being mathematically inclined and neurodiverse, I naturally fancy hobbies that revolve around predictable objects (or at least those that can be easily described by which probabilistic models) and stay away from those that require deep insight into a person (as humans are very complex and unpredictable).
In poker, I'm rather balanced or exploit population tendencies than punish a particular player's leaks

I've found a sexological analysis book that might be worth reading: 'With Pleasure: Thoughts on the Nature of Human Sexuality' by Paul R. Abramson (1995)
