Is there still some kind of nightlife with the Covid situation? Is it a terrible idea to come at this time due to Covid?
Apart from needing a negative test will i likely have any issues with getting in and having visa waiver stamped being from Europe?

I can't comment on golf or nightlife in Playa during Covid, or the poker community. However, Playa's economy completely relies on tourism, and overall it is very safe. Sure, you can get into trouble if you're dealing or using/buying hard drugs, but overall it's very safe, and MUCH safer than Tijuana/Rosario.
Weather-wise November to April would be a good time to be in Playa, but the summer months are brutally hot.
With the downturn in tourism I'm sure it will be super-easy to find an apartment to rent for a few months. Airbnb.com would likely be your best option for month-to-month rental, but I wouldn't book anything long-term in advance. Find a place you like on airbnb that has lots of good references, rent it for a few days, and then when you get there, if you like it, negotiate a lower monthly rate in person with the owner to avoid airbnb fees.
Playa is nice, but if you're not into diving, imo a month there would be plenty enough time to experience the area. If you've got three months and don't want to do a lot of traveling, I'd suggest spending a month in Playa, a month in Puerto Vallarta, and a month in Mexico City. Interesting read here
