Something to consider: if you are over the alcohol limit for driving, and sleeping in a car, with the car keys, you will almost definitely be charged with being Drunk in Charge of a Motor Vehicle if that police car does show up.

If you don't drink the black stuff, (but then why else would you be in Ireland?), you're probably ok as long as you park in non-suspicious places. Bejabbers, if you ask a farmer if you can park in his field, he'll probably let you; and also cook you supper.
Bring or buy a small fishing rod and a few hooks and stuff, and you'll always get away with camping next to a river or lake.
