upgraded to first class 1x was offered while walking onto the plane, business class 3-4 times, economy+ (which is a scam imo) about a dozen times and >90% of the time get the emergency exit row which is often significantly more room than economy+ - only times I don't get emergency exit row is when the airline specifically charges extra for those seats - in which case they tell me that if I see it's empty after takeoff to just nicely ask the stewardess so unless some madlads paid $80 extra for them (they rarely do) then you can switch over and never been told I couldn't. In fact, if they are fully booked and nobody paid for them, they need to give them away to someone for free anyway so it's usually the first person to ask.
If it's a really big flight that's surprisingly empty like a redeye 747 at 1/4 capacity then you can just kind of sit anywhere and they won't say anything as long as you don't push it to going beyond the 1st class curtain
same for drinks - I always ask for multiples and get them - first time they will be a little cautious but when I am asking for future rounds and clearly not inebriated/causing a nuisance then they are fine with it. Can get an entire bottle of wine, 2 bottles of booze, and 3 beers at a time without drawing any red flags. And never once been cutoff asking for 2x Hennessy at a time which is my go to airline beverage. On a 7 hour flight I'll easily put back a dozen or more drinks. Once on Finnair I asked if they had any Finnish beer because I wanted to try it and in the cart all they had was Heineken. She said she wasn't sure but would go take a look. A few minutes later she comes back with 5 different beers for me and says "you should try them all instead of making me carry some back" and of course I obliged
hotel upgrade given maybe 10+ times, usually when overbooked though, never happens on single night stays but could be a coincidence
never tipped for any of this, just a friendly attitude and professional appearance
key is being nice, smiling, if they aren't engaging you in small talk then you can forget it they just want to finish their task and move on - you won't get much then other than upgrade to emergency exit but if they begin with the standard "how are you?" etc etc then even a quick "I'm doing good, how are you? Actually, it would really nice if you have any room to bump me up to x"
it often makes no difference to the person stamping your ticket so if you look like you will belong and were nice to them it means nothing to them personally to click a different button before printing your pass or handing out hotel room card - just be sure to not act like you are entitled to it and acknowledge they'd be doing you a huge favor if it were possible
also helps that I'm 6'2", which in many parts of the world where I travel means I'll be among the tallest on board and that can elicit some extra "give this nice man the leg room he needs" mentality
I don't usually get a straight upgrade, but if I need to stand there anyway instead of being silent just say hi and see what you can squeeze out of it by asking
