you can book travel more or less the day of so no need to plan out how long you're staying in each place imo. just get there, see how you like it, and stay as long as you please. bangkok isn't my favorite place in thailand by any means, but definitely check it out for a few days, catch a muay thai fight or something and it's obviously great for partying.
also, if i may suggest something about chiang mai. i loved trekking, and i was really happy that i found a good place (pooh's eco-trekking near the foot of ratchpakinai road, by chiang mai rock climbing, though i'm sure there are others). you pay more, but you'll be in a smaller group, you go to villages that aren't always filled with tourists, the guides are much much much better, etc. etc.
