If it's offered at your consulate then go for it. Many consulates won't offer 3 entries. Each entry is for 60 days, but you can extend each entry by 30 additional days by going to Immigration in BKK, giving you in effect 90 days per entry. Once the 90 days is up I believe you can leave and then reenter, using your second entry, so on and so on. So for a triple entry tourist visa you could get 270 days I guess on that visa alone.
Multiple entry visas pertain to Non Immigrant visas (ED, Employment, Retirement, etc.). If you're planning on getting a job or an ED visa shortly after you get to Thailand, a triple entry tourist visa would be a waste of an extra $40 since you might be converting your visa type before you even use your third entry.
