Having pretty nomzie vegetable dishes on the reg seems like a good benefit. Vegetables are just such a time sink and generally unfun to prepare, I find myself in the "throw green X in the blender, add a cooked beet and a scoop of wheat grass powder and slam" at least a couple days a week.
Yeah, I get plenty of veggies - most of them raw or cooked with whatever meal we're eating. Looking at what "normal" ppl eat (like YTF's log) just makes me kind of sad - there is almost zero fruits and veggies being eaten. And they are so delicious.
On weekends my go-to lunch has been a huge salad with all of the CSA veggies we get throughout the week, chicken/bacon and sriracha sauce and newsman's light honey mustard dressing. I just pound that thing and feel super full afterwards. So delicious.
