I'll comment on only the 1st hand.

The short answer is, you cannot. Except if he hits his flush / gutshot whatever and stacks you.

However, as an advanced player you can try to be tricky to extract more value.
You can try flatting his turn and then hope he bets river and raise that, if you can assume his range to NOT have flush draws in that line. You can also raise smaller on the turn if you think he doesn't have much flush draws, e.g. has only so few ones to make it worth the risk.

You can also raise the turn smaller or whatever, maybe to 60c.

However, most of the time it's just is what he is, he probably donked with some semi-garbage, tried to fight back a bit but saw your obvious strength and backed off. It's just is what it is, you're prob. not getting his full stack unless he has Ac3c Ac5c or any variation of 22
