Field of View/Vision. It's the horizontal and vertical maximum angle of your view cone "into the game world".
In theory it has to be set based on distance from the monitor and size of the monitor. In practice there are some catch-all values that work for most monitor types (i.e. 16:9, 16:10, 4:3 etc). For example a horizotal FOV of 90 degrees is very popular on widescreen monitors. It wasn't popular "back then" because all monitors had the same aspect ratio.
Setting a wrong FOV can lead to motion sickness and nausea, which makes a slider incredibly useful.
