I think it is up to individual posters to make this judgment when deciding whether or not to accept a bet that is high-risk. That's part of gambling, and I don't really feel the need to protect people from themselves if it's not a widespread issue.
On the other hand, I also don't want to be the bet police. We already perma'd one long-time post this year for welching. If welching and bringing it to the forums becomes a systematic problem, I could enact some guidelines, but outside of one incident (involving a long, long time poster anyways) I don't see the point. It's also worth noting this is not a gambling site and it is not our (or 2+2's... i'm just a volunteer) responsibility to enforce or regulate bets.
