The colossi were moving levels/puzzles with each bringing something new and different. It had never been done before and they pulled it off very well. The initial pitch ("16 Zelda boss fights!") put me off, never understood why people thought that was a good thing when those were generally not the most engaging parts of Zelda-like games.
The gameplay to me was tedious and controlled poorly; you were holding onto the button to make the character grip, just hoping the boss would stop randomly shaking in time for you to not tire.
The sense I get from most people is that they praise it for its atmosphere and the feeling of sadness it gives them.
