Doesn't fit your definitions but I really liked the puzzle games The Witness and Talos Principle for serving bite size play amounts while also maintaining a strong desire to complete them.
I was actually looking at Elite: Dangerous today, but wasn't sure if it was interesting enough. It looked like it was station hopping similar to Eve.
I have Rocket League and played that for a little while.
And, I have The Witness and Talos Principle. I didn't fully finish The Witness, but got enough out of it. And I nearly finished Talos up until that last level, which I didn't care to figure out. haha

I've seen Subnautica recommended a few times on reddit along with Stardew Valley and Terraria. Subnautica looks interesting. I've probably watched a little too much to spoil it.
