Oh dear, achievements are often stupid.
But if I love a game achievements keep me playing it. I wouldn't have played Binding of Isaac for 500~ hours if I didn't want unlock everything. Same with Dark Souls, I'd have finished with one playthrough or two, instead by setting a goal of 100% the game I had an additional 100 hours of fun.
Similarly:
Enter the Gungeon
Hexcells (all 3)
Spelunky (almost, except for the coop one)
Squarecells
and a few more. As soon as I hit 100% I dumped almost all of these games immediately and never looked back.
However it's not always like that. It all depends on the achievements and the game. I recently finished Cuphead, I loved it but there's no way I'd redo the bosses to get perfect scores, sounds boring. I loved Nuclear Throne enough to get 67 hours out of that, but I have only 27/44 achievements, I think I've seen everything I wanted to see and there's not much else, if the gameplay doesn't offer much new I'm not going to get those. Stardew Valley 96 hours and 29/40 and I think I've seen enough, grinding the days just to get the last bunch is very achievable but not appealing to me.
Contrary to this Crypt of the Necrodancer has a lot of achievements which are absolutely insane and tough, however I recently came back to it after 70 hours of playtime (when I thought I've done everything I wanted) and I'm slowly working on these achievements as they're helping me set some goals and have fun. I'm sure I'm not even going to attempt the last 10-15 achievements or so.
And there you have games without open goals like Civ 5, CK2, EU4 like others already mentioned are great for achievements because it helps you set up a goal in mind to aim for. I'd add Renowned Explorers: International Society to this which despite being a roguelike (so every run is different) I'm also having an itch recently to come back to it to untick some achievements.
edit: and I hate all of the achievements which are like "Use this stupid weapon and kill 5 opponents at once". Jesus.
