Ok, finally figured out how to make better use of the jobs, a lot of you from the PS3 crew probably already know, but it should really improve things for those who don't and are looking for good co-op missions.

Gives you a nice overview of all the jobs. Martin's, Lester's and Ron's are the good ones, but it probably works the same way for the rest.
Once you reach the level needed for the first job of each perosn they'll start calling you . Complete that first job and you should be able to just call them unter contacts to request an instant job, rather than wait ages for them to contact you. It's going to be chosen somewhat randomly from all the jobs whose level you've reached. Jobs aren't done forever once you complete them once as host.
It's possible you have to be the host, the one accepting the inital job request, for this to unlock, because I joined someone else in Martin's first job early on and hadn't unlocked the job requests, but probably had more to do with level being too low.
Rejecting the job requests from the other contacts rather than just ignoring them should speed up the process.
This is all just for starting. Players from all levels are able to join.

The "star" missions on the map unlock through the levels (though you can select them over the voting screens during sessions before that). Can't really find a good overview, they add up pretty fast. Hover over the icons on the map to see which level the unlocked at.
There are real deathmatches, yeah. Team and free for all. They're the skulls on the map, but it's quicker to just join them over your phone -> quick join -> deathmatch, if you're going to play randoms anyway.
Survivals (love them when you have a good squad that works together) unlock at lvl 15. Gang attacks (run into a red highlighted area and kill one of them to start, vs. CPU unfortunately) at lvl 18.
Important weapons: micro smg 5, SMG 11, snipe 21, lvl 24, STICKY BOMB 19
