I felt like I was betting for value both streets. After getting called on the flop is this just a x and fold river if unimproved?

Not sure what your question is; you have trips vs a fish! Could maybe size up otf but just shove turn as played.

I'm concerned I'm overplaying my hands. I seem to be value owning myself in big pots and I'm not sure if it's just variance or if I am playing too aggressive with hands I perceive as strong.

you can probably use smaller bets against a fish on the flop and turn, but you're obviously stacking off against anyone for 50bb.

As played obviously I can't x/f turn. What I am asking is if I should be playing this hand differently so that I am not pot committed and can get away from it when V raises.

I feel like I am frequently getting in spots where I am value betting and get raised and can't fold because of the pot odds. It might just be variance but I don't want to inflate pots only to get jammed on by a half pot sized raise or something.

Against a 50BB starting stack when you hit this flop, your mindset should be 'how can I get stacks in' rather than 'what if they raise turn, I'll be committed' etc etc. You absolutely want to get all the money in here, whether they raise or not. They can easily have worse hands still. If they somehow have it, then they have it. It sounds like you've been running into some poor variance recently.
