So I used to eat a lot of Tabasco. It was the only hot sauce I'd ever heard of. And then a few years ago I started hearing about srirachacha, with the rooster on the label. And I liked it a lot and ate a lot of it.

But lately I've been getting kinda tired of it, and I'm looking to expand my hot sauce horizons. I don't really want crazy heart-attack heat either, not into that whole scene baby.

I hear a lot about Frank and his hot sauce. To be quite Frank, I've never had it. I think I have had buffalo wings that used it in prep though. Love the hot wings.

Surely there are a lot of underrated Mexican hot sauces around and available to US consumers. I would welcome any hot takes on this hot sauce situation.

Bill Simmons has a hot sauce of the month club as a main sponsor of his new podcast, I kid you not. They sound like purveyors of painfully hipster hot sauce tbh.

So this is a thread about hot sauces. Keep it saucy and chime in with your thoughts and opinions.

Do you use a lot of hot sauce? If so, what type? What foods do you typically use hot sauce on?

Just got some Valentina at the grocery store, big bottle for a dollar. Looks pretty good from the online reviews I've read. And it's relatively low in sodium compared to the others.

Full disclosure: I'm a massive pussy when it comes to hot stuff. Not a big fan.

My former neighbor is a self professed masochist. He loves the burn. We were boozing one night and he dared me to put a drop of this stuff on my tongue. A drop. I deeply regretted doing that.

Hottest stuff I've ever tasted.

I like this with Caribbean food:

but I'm no connoisseur and I don't know how it compares. I need to eat more hot sauce. Anything that makes you sweat is good for you, right?

Yeah, I think in general hot spicy foods are supposed to be good for you.

This Valentina has good flavor but it's not quite hot enough for me. I shoulda got the black instead of the yellow, it's supposed to be hotter.

The best thing to do is to go into groceries in Mexican and Asian neighborhoods and buy a bottle of whatever they have. The tiny ones are usually less than a buck. Stick with the one you like. In the 80s, I found 30 or 40 brands. Now I would prolly find 3-400.

I never liked Tabasco. It tasted "chemically" to me. My go-to brand for years was Trappey's Red Devil, but for some reason it now sucks.

Now I use Louisiana or Cajun Chef. They're OK, and if I'm in Vegas or LA I can usually duck into a grocery or convenience store and find a couple of bottles to take with me to breakfast, etc.

Valentina is like Taco Bell's mild sauce. I like it, but it's not my go-to.

I typically like Frank's on pizza, sriracha in ramen, Tabasco/Cholula on eggs. I'll throw down w/ Tapatio and El Yucateca if they're around too.

Not really hot sauce, but Tiger Sauce is pretty good if you ever see it around.

Sorry to bring up Frank's again but my favorite is 'Frank's Red Hot' Buffalo Wing Sauce. I use it on lots of things from plain grilled meat (i.e. chicken, pork, turkey etc), sandwiches, hamburgers, and pizza among others. IMO, its a really good balance between heat and flavor. I find that some sauces just burn to the point you don't taste any flavor.

I always thought the regular Frank's stuff was lame. I'm not into crazy heat but I like at least a little kick and Frank's has nothing imo. I don't know about the newer Frank's stuff like the buffalo wing one as I've never had it.

Edit: what I'm referring to as regular stuff is called Frank's Red Hot I think.

I used to be a Tobasco fiend but hardly use it at all any more. I do not like Sriracha at all. Not at all.

For chicken wings, which we prepare as "breaded" and fried wings or tenders, drenched in sauce after frying, I use Frank's Red Hot Buffalo sauce. Using Frank's for wings prepared with traditional Buffalo wing recipes does not add nearly enough heat or flavor imo.

For almost anything else, I prefer Louisiana Hot Sauce. I can't eat red beans & rice without it.

I like hot sauce on eggs a lot. Also on chicken tacos I make. Oh, and pretty much any rice. One thing I don't use it on that a lot of people seem to like is pizza. Pizza is pretty much exploding with flavor as is imo.

Cholula I noticed is quite a bit more expensive that the other ones at my HEB.

I make olio piccante/spicy oil by using very fresh olive oil and a few drops (no more than eight in about a half-cup of oil, but I would suggest trying one drop at a time and using surgical gloves) of 1 Million Scoville Concentrated Pepper Extract Hot Sauce (that's a brand name, it's available on Amazon).

It's very spicy and retains the flavor of the fresh olive oil. This is the season to do it; fresh olive oil is arriving from California.

I didn't know I would need my surgical gloves. I usually only use those at crime scenes.

In that case, I get to mention chilli vinegar. Essential with pie & mash, which I had only today at Maureen's in Poplar. Recommended. Just down the road is Balfron tower, by my favourite London architect, Erno Goldfinger. That's how I roll.

D'Evereux Foods in Natchez, MS makes a kick ass hot sauce. In three different Peppery varieties. You can order online I think. I was recently in Natchez, buying bales of confederate flags, and stopped in downtown Natchez where they make this sauce and purchased a few bottles. It has my stamp of approval and guarantee. Much better than that Louisiana hot sauce and tabasco and all the other standards. It's Zydeco, compared to lackluster pop music.

I hope the feds can't use this Natchez info to trace you. They might be hot on your trail right now.
