Yea I know what youre saying, I am a newb but ive done a decent amount of research and I think I have it figured out. Funky beers in the linen closet on the 2nd floor, clean beers in the basement.

Part of the problem is that you really can't get it out of wood. Once it goes in the barrel, its there. Not nearly as big of a problem for breweries. Still have to be careful, of course, but nothing normal, everyday-use brewing chemicals can't take care of.

How do I convince a brewery to hire me as a brewer/assistant/whatever when I only have 1.1years of home brewing experience and have never worked on any commercial equipment at all? I'm not expecting for it to be great pay by any means but any estimation you can throw out there for a starting position?

From what I've read unless you go to school (Siebel, UC Davis?, etc) you have to start at an entry level position. Assuming you want to be a brewer that will be an Assistant Brewer position which is essentially grunt work (cleaning mash tun, moving supplies, cleaning kegs and the brewery and assisting on brews). These are usually 20-24k/year positions.

Go to probrewer.com and you can see all the job listings and for more accurate info. And keep us posted if you do make the jump, I'd sure as hell love to do it one day.

Im not using any wood, all glass and plastic, the glass is used interchangeably between clean and wild beers but all plastics are dedicated (siphon, tubing, bottling equipment etc). I dont use any wood, aside from chips and cubes that I hope to inoculate and reuse batch to batch. I did a significant amount of research before I dove in so I feel pretty confident Ive made the right choices.

Reading the Madfermentationist alone is probably enough research though.

I currently have the following wild beers going.

5g Belgian Strong w/Brett L
5g Strong ale with Bugfram 5 (same wort as the Belgian Strong)
1g of my Blond Ale with a whose who of dregs (RR, Jolly Pumpkin, Orval, Hansenns)
4g 100% Brett C Pale Ale.

Im extremely anxious to try all of these, I feel like I look at them every single day.

Yeah I was planning on that. I've applied for a couple assistant brewer jobs in the last couple weeks and haven't heard anything back yet. I'll let you know if I do.

wraths, it wouldn't be a bad idea to see if you can do some free work at some places near you. At teh worst it would give you some experience to draw to eventually get a paid gig

Drinking some Hopslam that was bottled on January 26th right now. This is the DIPA to beat imo. Better than Arctic Panzer Wolf, Dreadnaught, Hop Wallop, 2XIPA and all the other double IPAs that I've had. It's so good.

I havent gotten my hands on any Hopslam just yet, I would have but I put a moratorium on purchases from my local bottle shop for 2 weeks so I might miss out. Priorities suck.

Sold my Keggle last night, the vessle that got me going in all-grain. It was a fun ~2 years but my 20G pot has been going strong and $150 for something collecting dust is too much to scoff at.

The seems wild indeed, just a few questions. Is this a recipe that youve come up with yourself from scratch? The reason I ask is bc it looks along the lines of the 120 Minute clone's Ive seen, different but along the same lines. You might rather go with one of the tried and true 120 Minute recipes out there on HBT. The reason being that its a pretty expensive and time consuming (fermentation length wise) endeavor.

If you stick with the current recipe I do think that your hop schedule could use some tweaking. The 4 oz at 60 minutes seems a bit overkill, Id rather see something like 2 oz there and maybe some FWH to increase aroma? Just a thought.

Not a problem. Always looking on for my 2p2 brothers. Northern Michigan is absolutely beautiful too. Summers are like heaven

You're correct, it's based off the 120min clones I've seen on HBT. I've sampled the 120min and found it wayyyyyyy too sweet for my tastes and wanted to put a lot more bittering hops into the recipe. The 4oz of CTZ are FWH at 90min and I'm not sure if the bitterness will really be perceived differently than just 2oz at 90 but for an extra 4$ I'm not too concerned about it I guess.

I need to get some extra carboys/buckets soon, anyone know of any good deals going on right now?

Wow just clicked their graphic designer/developer application and it sounds perfect for what my degree is in. I'm a digital media major and my last two internships have been doing web design/developing, graphic design, and eMarketing. Wonder if they'd let me work that position for X long and give me a shot at a brewing position whenever one opened up? Only one way to find out! One time dealer!

Get lucky, basically. An entry level position will be hourly, probably something like $10/hr depending on location, and be grunt work. It'll get a hundred applicants, 95% of whom have no beer or brewery experience, so highlight that.
