I make a lot of things in the CrockPot because I work from home and I can just throw it in when I get up and forget about it.

Pot roast; chicken dishes; chili; etc

I'm always looking for more if anyone out there has anything special!

FYI: Not to be picky but I can't eat leafy greens; onions (though I do put whole onions in the pot but not diced, for flavor); ruffage; anything like that due to Crohn's disease so most of my recipes are boring but have to be...

Pot roast pork especially for IBD-

3.5 lbs pork shoulder, boned.
1 bell pepper, sliced fairly large pieces
1 lb baby carrots
kosher salt to taste
ghee to brown meat
coriander to taste
1 cup chicken stock. You'll need to make it yourself to avoid onions.
1 Tbsp asafetida

Heat the ghee in cast iron skillet, add asafetida and cook until the smell turns, about 30 seconds. Brown meat, then put all ingredients the crock pot on low for ~8 hours.

If you don't have IBD or cook for someone who does, use onions and garlic instead of asafetida.

I experimented recently with simple stuff.

1 can cream of chicken soup
3 boneless skinless chicken breasts
salt
paper

cooked it for 5 hours on low

boiled some egg noodles on the stove. Once soft I tossed them into the mix for about 45 minutes

The outcome tasted like chicken n dumplins!

Everything is better with paper. It's a lot like bacon but it has a woody taste to it

Pulled pork and potatoes. Just get some boneless pork (however much you want really), some of the packets of McCormick Pulled Pork, the ingredients it says you need (red wine vinegar, ketchup, brown sugar). Cut up the pork as big or small as you like. Peel and slice some potatoes (I usually just use the baker potatoes but if you used something like red potatoes I wouldn't even bother peeling those). Mix all the seasoning together. Pour over pork and potatoes. Set it and forget it. Maybe like half an hour max of prep time so its the perfect thing to prepare before you head to work or before you head to sleep. Just set the crock pot on the lowest setting possible and it'll be ready whenever you are.

McCormick Pulled Pork packets are full of onion, so OP will want to avoid this.

This is just a rough outline for an easy stew / hearty soup.

Ingredients:
  • Cubed (stew meat) red meat. Beef, Bison or lamb all work good.
  • Or some type of chicken on the bone
  • Or Pork Shoulder
  • Or Sausage
  • Canned tomatoes. You can get these plain, the only ingredients being tomatoes and water.
  • Kosher Salt
  • Fresh ground black pepper
  • Bay Leaves
  • Rosemary. A lot of places are selling these as mini Christmas trees right now. Buying the plant is cheaper, fresher and tastier than buying a packaged version. They're not that hard to keep alive, and even if it dies you still have lots of rosemary.

Experiment with other spices that fit into your dietary restrictions. Such as cummin, paprika, cayenne pepper, basil, oregano.

Cooking:
  • Salt and Pepper the bottom of the crockpot, add bay leaf and rosemary.
  • Add Meat
  • Salt and Pepper the meat, add bay leaf and rosemary.
  • Add tomatoes. 2 cans (14.5 oz) for every pound of meat works good for me and maybe half a can of water.
  • Cover and cook.

Within that simple framework, there's actually a lot of variety possible. When you reheat this as leftovers you can add pasta and/or vegetables if your diet permits.
