A lot of people say thank you and a bunch don't and it's not a big deal. The American stereotype is the fake smile, "thank you, have a nice day, would you like cheese with that?"
It's perfectly acceptable to say "cheers" or "ta" or even a knowing nod in place of a thank you.
I pretty much always say thank you though. I was brought up correctly.
