Add -san to everyone's name. Guys you usually call by their last name-san and girls by their first name-san, though that seems to be flexible (or subject to complex rules I've never figured out.)
Well in HK, it's quite relaxed. I mean in retrospect I prolly already done a lot of things wrong, but as long as you don't break any very basic politeness rules, they tend to put everything in the "typical for oblivious/barbaric/incompetent westerner category" lol.
I'm guessing it's the same as in HK/China that last name is always put in front
