I came across two nice offers for a desktop PC. Used for standard stuff and allow my kids to play Fortnite

Which one seems the better bang for the buck?

From what I read the NVIDIA GeForce GTX 1060 3GB is similar to AMD Radeon 480 and therefore better than AMD Radeon 460. So the cheaper systems seems to have the better graphics card.

Unless gaming is really the top priority, I'd go for the I7/RX460 setup. The processor is significantly faster and the additional RAM will be helpful. The RX460 should be pretty good for playing most games at 1920x1080.
The 1060 is a better GPU, if the AMD proc was one of their later Ryzen models, this would be the way to go for gaming.

The i7 machine will do almost as well if not better even in games because the CPU is so much faster and it has more RAM.

I'd go with the i7 and if you want to upgrade the GPU later when prices aren't so silly you can always do that at a later date

I wouldn't count on being able to swap in a higher end card on a prebuilt system. Most don't have a ton of overhead on the PSU, extra PCI-E power connectors and card length can present a problem as well. The RX 460 should be viable for esports type gaming at 1080P for probably the next couple years.

We are now 7-8 months later

When would be a good moment to buy a new / secondhand GPU? And what should I be going for? I don't want to "overinvest" into a GPU making the rest of the system the bottleneck for its performance

hmmmm seems that second hand GPUs that I can currently buy at 50€ are more or less similar to the RX 460 and I'm not paying over 100€ to upgrade.

Seems I'm still fine for quite some time with this one.

Look at the 1050ti, 4gb version. It can be found cheap and you won’t have to upgrade your power supply to use it.
