Why are groups associative, or required to be.

My understanding is that symmetry groups contain transformations that are combined by function composition and since function composition is associative it could be tied to this. However doesnt this mean that in other type of groups that arent based on symmetry transformations the associative property is no longer meaningful? Any experts here.
